Austmann Tre Gamle Damer all-grain beer kit – Belgian pale ale
Together with Austmann Bryggeri in Trondheim we have created an all-grain kit for those who want to brew the brewery's flagship Tre Gamle Damer. The beer is a tribute to the three brave women who made Austmann's brewery dream possible. It is a pale ale with Belgian yeast, giving a good balance between fruitiness, bitterness and spicy notes.
The kit is for brewers who mash and boil from scratch, for example with a brewing system.
Flavour and aroma
The beer is clear golden with a white head. The aroma has notes of biscuit, bread and fruit, with a hint of Belgian spice. The flavour is fruity with a light residual sweetness, and the Belgian yeast adds a subtle spicy character. The finish is dry and balanced, so the beer works both with food and on its own.
Food pairing
Tre Gamle Damer pairs well with dishes such as beef bourguignon, wild mushrooms, porchetta and rich pasta dishes.

Priming sugar, fining agents and any yeast nutrient are not included in the kit.
Unmilled malt for fresh ingredients
For quality and shelf life, the malt is supplied unmilled. If you don't already have one, we recommend a grain mill so your ingredients are completely fresh on brew day. Freshly milled malt gives the best result.

How strong will the beer be?
With OG 1.051 and FG 1.009 the beer ends up at approx. 5.5% ABV. Bitterness is 34 IBU and colour 16 EBC.
Which yeast is included, and how should it ferment?
The kit contains one pack of BE-256 dry yeast. Recommended fermentation is 10–14 days at 20 °C.
What equipment do I need?
An all-grain kit is for brewers who mash and boil themselves, for example with a brewing system. You also need a fermenter, sanitizer and a grain mill, since the malt is supplied unmilled.
