SafAle BE-256 from Fermentis is a yeast strain recommended for a range of Belgian beer styles, such as abbey and trappist-style ales, known for their fruitiness and high alcohol content. It ferments very quickly, flocculates well and gives strong fermentation aromas.

How to use the yeast
You can sprinkle the yeast directly onto the wort at or above fermentation temperature, or rehydrate it first: sprinkle the yeast into at least 10 times its weight of sterile water or boiled and hopped wort at 25–29 °C, leave for 15–30 minutes, stir gently and pitch the slurry into the fermenter.

How much yeast do I need?
Fermentis recommends 50–80 g per hectolitre, i.e. 0.5–0.8 g per litre. One 11.5 g pack therefore covers approx. 14–23 litres of wort.
What temperature should BE-256 ferment at?
The ideal fermentation temperature is 18–26 °C. A stable temperature gives a cleaner and more predictable result.
Do I need to rehydrate the yeast?
No. Fermentis states that the yeast can be sprinkled directly onto the wort or rehydrated first. Choose the method that suits your equipment.
How should I store the yeast?
Dry and cool. Fermentis recommends below 15 °C for storage beyond six months. Reseal an opened pack, keep it at 4 °C and use it within seven days.
