SafLager S-23 11.5 g – German lager yeast for fruitier lagers

SafLager S-23 from Fermentis is a bottom-fermenting yeast strain originating from Berlin, Germany. It is used by commercial breweries in Western Europe and is recommended for fruitier lagers with more esters than the most neutral lager strains. The yeast gives a beer with good length on the palate.

How to use S-23

Fermentis recommends 80–120 g of yeast per 100 litres of wort. For 20 litres that is 16–24 g, i.e. two sachets. You can sprinkle the yeast directly onto the wort, or rehydrate it first: sprinkle the yeast into at least ten times its weight of sterile water or boiled and hopped wort at 15–25 °C, leave it for 15–30 minutes, stir gently and pitch.

Store unopened yeast below 24 °C for up to 6 months, and below 15 °C for longer storage. Opened sachets must be sealed, stored at 4 °C and used within 7 days.

How many sachets do I need for 20 litres?

Fermentis recommends 80–120 g per 100 litres. For 20 litres that is 16–24 g, i.e. two 11.5 g sachets. Lager yeast needs more cells than ale yeast.

What temperature should S-23 ferment at?

The ideal fermentation temperature is 12–18 °C. A stable temperature gives the cleanest result, so a temperature controller is a good help.

What kind of lager is S-23 suited for?

S-23 is recommended for fruitier lagers with more esters and good length on the palate. For a completely clean and neutral lager, W-34/70 is a more common choice.

Do I need to rehydrate the yeast?

No, you can sprinkle it directly onto the wort. To rehydrate, sprinkle the yeast into at least ten times its weight of sterile water or boiled wort at 15–25 °C and leave it for 15–30 minutes.
