SafAle US-05 from Fermentis is an American dry beer yeast that gives a neutral, well-balanced and clean result with a crisp finish. It forms a firm foam head and stays well in suspension during fermentation. It suits American beer styles and hoppy beers such as pale ale, IPA and APA, where you want the hops to take centre stage.

US-05 is based on a well-known yeast strain, the same one that WLP001 and Wyeast 1056 originate from.

How to use US-05

Fermentis gives two methods. You can sprinkle the yeast directly onto the wort at or slightly above fermentation temperature, gradually so it does not clump. Or you can rehydrate it first: sprinkle the yeast into at least ten times its own weight of sterile water or boiled, hopped wort at 25–29 °C, leave for 15–30 minutes, stir gently and pitch.

How many packs do I need for 20–25 litres?

The dosage is 50–80 g per 100 litres. That equals 10–16 g for 20 litres and 12.5–20 g for 25 litres, so one to two 11.5 g packs. Use more yeast for stronger beers.

Do I have to rehydrate the yeast?

No, Fermentis states that US-05 can be sprinkled directly onto the wort. Rehydration is an option, and many homebrewers feel it gives a safer start.

What temperature should I ferment at?

The ideal range is 18–26 °C. The lower end gives the cleanest result. A stable temperature matters more than the exact figure, because the yeast generates heat itself during active fermentation.

How should I store the dry yeast?

Fermentis recommends below 24 °C for storage up to six months and below 15 °C for longer storage. Seal an opened pack, keep it in the fridge and use it within seven days.
