Description

Fermoale AY4 11.5 g – American ale yeast from AEB Brewing

Fermoale AY4 from AEB Brewing is an active dry yeast for top-fermented beer, originating in the USA. The strain gives a clean and neutral fermentation and suits a wide range of American and British beer styles, such as IPA, APA, EPA, brown ale and porter. It is a versatile American ale yeast of the same type as US-05.

The flavour profile has light malt notes and a hint of citrus, and the mild esters give a balanced, rounded finish. High attenuation gives a dry and clear beer. With high flocculation and alcohol tolerance up to 10–11%, AY4 suits both classic and stronger ales. Low ester and sulphur production gives a clean and consistent fermentation.

Frequently asked questions about Fermoale AY4

Is Fermoale AY4 an alternative to US-05?

Yes. AY4 is an American ale yeast of the same type as US-05, with a clean, neutral fermentation and high attenuation. It suits the same beer styles, such as IPA, APA and pale ale.

What temperature should AY4 ferment at?

The fermentation temperature is 16–23 °C. Keep the temperature stable, as the yeast generates heat itself during active fermentation.

Do I need to rehydrate the dry yeast?

Dry yeast benefits from rehydration, although this is debated. Many brewers sprinkle it straight onto the wort with good results.

What do STA-1 negative and POF negative mean?

STA-1 negative means the yeast does not break down dextrins, so it will not ferment the beer drier than expected. POF negative means it does not produce phenolic flavours such as clove.
