Citra hop pellets 100 g – intense citrus and tropical fruit

Citra is an American high-alpha hop with an intense aroma of citrus, tropical fruit, mango and lime. It was bred by Gene Probasco and released in 2008 by John I. Haas. Citra is widely used in modern IPA and pale ale, both on its own and with varieties such as Mosaic, Simcoe, Galaxy, Amarillo, El Dorado and BRU-1.

Aroma and flavour

BarthHaas describes an intense, citrusy and fruity profile with grapefruit, mango, pineapple, gooseberry, blackberry and redcurrant, and a subtle hint of lilac.

BBC Pure Hop Pellets

The BBC Pure Hop Pellet was developed in the USA in a collaboration between BarthHaas' global partner John I. Haas and the Boston Beer Company, hence the name BBC. The aim was a pellet that gives higher efficiency in the brewing process while preserving as much of the original hop as possible.

  • Added in the boil, in the whirlpool or for dry hopping
  • Finer, more uniform grind than standard T90 pellets
  • Milling and sieving at approx. -35 °C prevents oxidation of resins and essential oils
  • Higher yield of aroma compounds, better homogeneity and better storage stability
  • The proprietary process removes unnecessary plant material, giving true hop flavour

Think of it as a "super T90 pellet". You can use the same amount as with standard T90 pellets, or reduce the amount by about 10% to achieve the same effect.

Storage

The hops are vacuum-packed and stored in a freezer room at -18 °C. We prioritise hops from the last two harvests, but older hops can be just as good when stored correctly. Read more about shelf life and storage in the article by Yakima Valley Hops (PDF).

BarthHaas recommends storing BBC Pure Hop Pellets at 0–5 °C and using them within 3 years of processing, or within 5 years at -20 °C. An opened foil should be used within a few days.

Frequently asked questions about Citra

Can Citra be used on its own?

Yes. Citra is often used as the only hop in IPA and pale ale, but it is also widely combined with Mosaic, Simcoe, Galaxy and Amarillo.

Which alpha acid should I use in my calculations?

The alpha acid for the lot you receive is stated in the product title. Use that figure when calculating bitterness. The range under Technical data shows typical values for the variety and varies from year to year.

When do I add Citra for bittering?

For efficient bittering, add the pellets at the start of the boil or within 15 minutes of it. BarthHaas states a normal alpha acid utilisation of 30–35%, depending on the boiling system.

When should I dry hop?

Dry hopping is usually done around day 7–9, preferably once primary fermentation is over and the temperature has dropped. Early, heavy dry hopping can give vegetal flavours, but for NEIPA many brewers dry hop earlier for biotransformation. For a hop stand, hold the wort at 70–90 °C for 10–30 minutes.
