Castle Malting – Belgian specialty malt, flaked grains and spices
Castle Malting is a Belgian malting company established in 1868 near Beloeil. Here you will find specialty malts such as Special B, Cafe and Cafe Light, flaked wheat, maize and rice, and ingredients for Belgian beer such as candi sugar, brown sugar, orange peel and coriander. The malt is sold in 100 g steps for homebrewing and in 20–25 kg sacks for breweries.
Please note: Loose malt (100 g, 20 kg and 25 kg) is currently not sold to Sweden. Malt extract and beer kits can be ordered as usual.

How to use malt from Castle Malting
- Special B (300 EBC) is a double-roasted Belgian dark malt. It gives a deep red to dark brown colour, raisin-like flavour and hints of nut and plum, and is used at up to 10% in abbey ale, dubbel, porter, brown ale and doppelbock.
- Cafe (500 EBC) and Cafe Light (250 EBC) add a nutty coffee flavour and aroma to stout, porter, Scotch ale and dark Belgian beers.
- Flaked maize and rice make the beer lighter in body and colour, with a clean, crisp mouthfeel. Flaked maize gives slightly more colour and a sweeter finish than flaked rice. Flaked maize is used at up to 20%.
- Chit Wheat Flakes are lightly kilned wheat malt used to improve foam stability.
All the flaked grains are pre-gelatinised and can go straight into the mash without milling.
Sugar, spices and adjuncts
The Castle Malting range also covers ingredients for Belgian and spiced beers. White and dark candi sugar, light and dark brown sugar (cassonade), cane sugar and maltodextrin come in 25 kg sacks. The spices come in 1 kg and 5 kg packs: sweet and bitter orange peel, coriander, lemon peel, ginger, juniper berries, liquorice root, hibiscus, grains of paradise and star anise. Rice hulls in 17 kg are used to improve lautering.

Frequently asked questions about Castle Malting
What is Special B used for?
Special B gives a dark reddish-brown colour, body and flavours of raisin, nut and plum. It is used at up to 10% in dubbel, abbey ale, porter and doppelbock, among others. It can replace chocolate and black malt when you do not want bitterness.
Do flaked grains need milling before mashing?
No. Flaked maize, rice and wheat are pre-gelatinised and rolled, and can go straight into the mash without milling or cooking.
What is the difference between flaked maize and flaked rice?
Both give a lighter, paler beer. Flaked rice gives less colour and a drier finish, while flaked maize gives slightly more colour and a sweeter finish.
Which spices are used in witbier?
Witbier is traditionally spiced with coriander and orange peel. Both are available here in 1 kg and 5 kg.
