Briess – American specialty malt and spray malt
Briess is an American maltster that has been making malt since 1876. Here you will find the Briess malts Victory, Special Roast and Crystal Red in 100 g steps for homebrewing and in 22.7 kg sacks for breweries, plus Bavarian Wheat spray malt (dry malt extract) in 0.45 kg bags for extract brewing and yeast starters.

How to choose Briess malt
- Victory Malt (55 EBC) has a baked-bread aroma and a clean flavour that suits both ales and lagers. It is used at 5–10% in IPA, ESB, amber, nut brown ale and porter. In small amounts it adds complexity and warm colour to paler ales and pilsners.
- Special Roast (79 EBC) is roasted deeper than Victory and gives a stronger toasted-bread and biscuit flavour with a sourdough note. It is also used at 5–10% in IPA, ESB, amber, nut brown ale and porter.
- Crystal Red (394 EBC) is a drum-roasted crystal malt. Small amounts give golden to red hues with little flavour impact, while larger amounts give a deep red colour and caramelised sugar notes.
- Bavarian Wheat spray malt (6.5 EBC) is dried malt extract from 65% wheat malt and 35% base malt. It is used for extract beer, to adjust gravity and colour in all-grain brews, and for yeast starters.

Frequently asked questions about Briess
What is the difference between Victory and Special Roast?
Both are roasted malts with a bready flavour. Special Roast is roasted deeper, 79 versus 55 EBC, and gives a stronger toasted-bread and biscuit flavour with a sourdough note. Victory is cleaner and also works in paler beers.
How much spray malt do I need for a yeast starter?
100 g of spray malt per litre of water gives a wort of about 1.038.
How much does spray malt raise the gravity of a brew?
In a 25-litre brew, 1 kg of spray malt raises the gravity by about 15 points, for example from 1.045 to 1.060. 1 kg of spray malt per 10 litres of water gives a wort of about 1.038.
How should I store spray malt?
Spray malt absorbs moisture once the bag is opened. Close the bag tightly and store it somewhere dry.
Can I get the malt crushed?
Yes. The 100 g Briess malts can be ordered whole or crushed, and you can write a ready-mixed grain bill in the comment field at checkout.
