BBQ rubs – seasoning that builds a crust
A BBQ rub is a dry spice blend rubbed into the meat before grilling or smoking. During a long cook the seasoning forms a dark, flavourful crust known as bark. The simplest is SPG – salt, pepper and garlic – the foundation of Texas BBQ. Sweeter rubs with brown sugar and paprika are popular on pork and ribs.

BBQ sauces and glazes
A BBQ sauce balances sweetness, acidity, smoke and spice. It is used as a marinade, as a glaze towards the end of grilling or as a dip for the finished food.
